Vegan Homemade Thai Red Curry Paste Recipe

Ingredients For Homemade Thai Red Curry Paste Recipe:

  • Ginger/galangal: 1 small stick
  • Peppercorns: 2 tsp
  • Garlic cloves: 5-6
  • Red chilies soaked for 10 minutes: 5-7 depending on how much heat you like.
  • Lemongrass: a finger-sized piece is good enough. It has a strong smell and flavor, so if you are not used to this just like me, you can either put very little or skip this altogether.
  • Grated onion: half
  • Green coriander leaves: 1/3 cup
  • Coconut milk: 3-4 tbsp
  • Chilli garlic sauce: 2 tbsp
  • Coriander powder: 2 tsp
  • Cumin powder: 1 tsp
  • Lemon juice: 2 tsp
  • Salt: 1 tsp
  • Lemon zest or lime leaves
  • Thai basil: 5-6 leaves

Methods:

  1. Blitz them to a fine paste.
  2. Store them in the fridge and they will last a week easily.
