Thai Vegan Red Curry Recipe

Serves: 2

Ingredients:

For the curry:
2-3 cups of assorted veggies cut in chunks, steamed or lightly boiled
1 cup of coconut milk
1 tbsp coconut or sesame oil
Some Thai Basil leaves
Green Onions: 1-2 chopped
Salt to taste

Method:

Steam or boil the vegetables. Keep the stock of the vegetables aside after boiling the veggies.
In a hot pan add the oil; add 2-heaped tbsp. of Thai red curry paste.
Sauté the paste for 2-3 minutes on low heat, now add the coconut milk slowly to the pan. If the coconut is too thick then add 1-2 tbsp of stock, now mix the coconut milk with the curry paste.
Now add the vegetables to the pan, some salt, mix everything properly and let this simmer for 8-10 mins.
Your dish is ready, garnish with some green onion, basil and serve with some steamed rice, sticky rice or rice noodles.

    Please tell me which veggies you have used in this recipe. It seem you have used cottage cheese and noodles too.

      So sorry for the late reply. Saw your message in spam. Sorry again! You can use any veggies,and no i used Tofu instead and rice noodles.
