Pindi Chole or Pindi Chana Masala is one of the easiest and delicious chickpea Indian punjabi dish that you can make. 

Pindi Chole is a hearty preparation made using chickpeas or garbanzo beans. Pindi comes from the word Rawalpindi, a city in erstwhile Punjab in undivided India now belongs to in Pakistan. A lot of people make Pindi chole in India, it is infact a very common dish, this is mainly because after the partition when the Punjabi community left what is now called as Pakistan and came to India, they brought with them these recipes which we are lucky enough to enjoy.

Pindi chole is a bit different from the regular chole dish. This dish is dark brown in colour, with no gravy. The dish is dry but flavourful. It is a crowd puller and a must item for Sundays brunches.

 

What you need to do before cooking.

You gotta soak the beans overnight.

 

How to get the black colour in Pindi Chole?

 
There are many ways to get this, 1. Use a tea bag, 2. Use dried amla (Indian gooseberry)  3. Use an iron vessel to soak the beans.

 

What should i eat this dish with?

I like eating it with naan or bhature. Naan is a much healthier option. You can find the recipe for naan on my Youtube channel.

 

Are chickpeas and garbanzo beans the same?

 
Yes they are. Grabanzo is the Spanish name for chickpeas.

100%, not just vegan but extremely easy to make, This can become your vegan staple.

 Chickpeas are a a great source of non animal protein. They are also loaded with vitamins and minerals. For example, they have choline, which helps your brain and nervous system run smoothly, as well as folate, magnesium, potassium and iron.  Chickpeas are also high in vitamin A, E and C.

What Ingredients Do You Need To Make Pindi Chole

  • Chole/ chickpeas: 1 cup
  • Dried Amla: 4-5 pieces or get a bag of tealeaves
  • Black Cardamom: 1-2
  • Green Cardamom: 2-3
  • Cinnamon Stick: 1 small
  • Cloves: 3-4 (optional)
  • Peppercorns: 7-10
  • Bay leaf:2
  • Salt: 1 tbsp
  • Baking soda: 1/2 teaspoon
  • Chaat Masala : 1 tbsp ( for DIY chaat masala recipe, click here)
  • Cumin Powder: 1 tbsp
  • Red Chilli Powder: 1 teaspoon
  • Coriander Powder: 1 tbsp
  • Garam Masala Powder ( for DIY garam masala powder, click here)
  • Dry Mango Powder: 1/2 tbsp
  • Any neutral oil/vegetable oil: 1/2 + 1/3 cup (I used Canola oil)

Tip: for the typical Black colour, it is always a great idea to soak chickpeas in an iron wok/karahai. The iron container adds iron to the chickpeas making it even more healthier.
