Ingredients For Tomato Pasta Sauce Recipe:
- Tomatoes: 1 kg
- Onions: 1. Chopped
- Basil Leaves: 4-5
- Garlic cloves: 4-5. Crushed
- Olive oil: 2 tbsp
- Butter: 1 tbsp (optional)
- Salt to taste
- Sugar: 1 tbsp
- Red chili flakes: 1 tsp
- Pepper: 1 tbsp
Method:
- Take the fresh tomatoes, drop them into a pan of boiling water and leave for about a minute, until the skins split. Lift out and peel, then roughly chop.
- Heat oil in a large, heavy-based saucepan over medium heat. Add onion. Cook, stirring, for 5 to 6 minutes or until the onion has softened and has turned golden. Add garlic.
- Cook, stirring, for 2 minutes or until fragrant. Tip in the tomatoes, and break up with a wooden spoon if necessary, then add the sugar, salt, pepper, chili flakes, butter a cup of water. Simmer for about 25 minutes, or until it is thickened to your liking.
- Stir from time to time, mashing up any large pieces of tomato with the back of a wooden spoon.
- Test the seasoning, add the basil leaves, roughly torn, and drizzle in a little extra-virgin olive oil if you like before serving.
