How to make Prawn Paella Recipe:

For a taste of seaside Spain try this super delicious and simple Paella Recipe. This is a great dinner recipe, also a winner at parties. I have used Risotto rice for this, a little tip, buy a packet of good quality Risotto rice, and it will last months. The rice is slightly expensive but considering how well it lasts I think it makes sense to buy and keep a packet in the pantry. Especially for days when you don’t know what to cook but you know you wanna eat something really really nice without much effort.

Ingredients For Prawn Paella Recipe:

  • Paella rice/risotto rice/ short grain fat rice: 2 cups
  • Medium prawns: 8. Shell removed and cleaned
  • Yellow bell pepper: 1. Sliced
  • Red bell pepper: 1. Thinly sliced
  • Onion: ½, sliced
  • Dry red chilies: 2 tsp
  • Pepper: 1 tbsp
  • Garlic: 3 cloves. Very thinly sliced.
  • GF Flavoured Sausages: 2. Cut into chunks.
  • Olive oil: 3 tbsp
  • Paprika: 2 tsp
  • Chicken stock: 4-5 cups to cook the rice.
  • Lemon: Juice of half lemon
  • Parsley (Optional)
  • Saffron threads: 1 tsp. Soaked in warm milk.
  • Salt to taste
  • Large flat non-stick pan.

Method:

  1. Heat the oil in a large non-stick pan over medium heat.
  2. and fry the sausages for 4-5 mins. Remove and set aside.
  3. Fry the prawns till they turn dark golden and set them aside.
  4. Add some oil if you think the pan needs it. Now add the onion and garlic in the hot oil for 4-5 mins until softened, then add the bell peppers and rice.
  5. Cook till the rice is a nice translucent. Stir in the saffron milk and chicken stock. Stir and season to taste. Bring to the boil and then reduce to low heat, cover with a lid and cook for 15 minutes. (Do not add the chicken stock all at once, add in slowly. Start with 2 cups, when the stock has evaporated, add some more. Keep adding till the rice is almost done.) Add pepper, paprika. Mix it well. Now add the sausages and the prawns.
  6. Plate and sprinkle with roughly chopped parsley and a squeeze of lemon. Enjoy!
