Cucumber and Grapes Gazpacho Cold Soup with Shrimp
Gazpacho is a cold soup made of raw vegetables and is served cold. This soup originates from Spain and this can be customized in many ways to accommodate your taste. I like to use seasonal veg and fruits to make this, today I am using cucumber, grapes, mint and lemon. This Gluten-Free Gazpacho Soup recipe is just as delicious, creamy, and fresh as the original recipe. It’s so good you won’t even miss the bread ( the traditional gazpacho recipe has bread).

Ingredients For Cucumber and Grapes Gazpacho Cold Soup Recipe:
- Cucumbers: 4: peeled, seeded and chopped
- Green Grapes: 1 1/2 cups
- Garlic Cloves:1- 2
- Extra Virgin Olive Oil: 3-4 tsp
- White Wine Vinegar:2 teaspoons OR lemon juice: 1 tsp
- Water: half-1 cup
- Salt: As per your taste
Methods:
- In a blender, combine the cucumbers, grapes, garlic, olive oil, vinegar and water; puree until smooth.
- Season with salt. Leave it in the refrigerator to chill. Serve chilled.
Tips: You can also garnish with shrimp, sauteed mushrooms, or feta cheese.
