Gluten-free Cheese Crackers Recipe

There are some very basic snacks that I miss after going gluten-free, cheese crackers are one such snack. I absolutely love it and can you imagine it never occurred to me to replicate this in my own gluten-free kitchen. So the other day I was watching a Hollywood movie and I saw someone eat cheese crackers and I don’t know, something just clicked in me and I rushed to the kitchen to make it.

I had cheese, just the regular hard cheese block for pizza, nothing fancy, added some butter to it some flour, salt and ta-da the crackers were done. 

Yes, the recipe is that simple!

Flour:

Let’s talk about the most feared ingredient in any gluten-free baking-yup, the flour. So I used gluten-free all-purpose flour. I used Bob’s red mill for this recipe. This was the only brand I had in my pantry in Jaipur so used it. You can use any gluten-free flour that you are comfortable with.

Cheese:

You know most people make cheese crackers with Cheddar Cheese, but since I didn’t have it I went ahead with what I had. But if you are more planned than I am, go ahead and use cheddar cheese as the flavour will be punchier and the colour with my more orange. I have made it with cheddar cheese too and honestly I like the flavour of both kinds of cheese.

Try not to use pre-grated cheese; freshly grated cheese gives much better results.

Butter:

Make sure it is not cold, normal room temperature butter is much easier to blend.

Chilli powder:

You can use any herb/chilli powder of your choice. You can use paprika, hot chilli, cayenne anything..just make sure you don’t use it so much that it overpowers the cheesy flavour.

Ingredients For Gluten-free Cheese Crackers:

  • Grated Cheese- 1cup
  • Soft butter- 2 tbsp
  • Salt- 1tsp
  • Red chilli powder- 1/4tsp
  • Glutenfree flour- 1 cup
  • Add chilled water- 1tbsp
  • Make a soft dough. Wrap in cling film and chill for 30 minutes.

Step-by-step Instructions:

  1. Grate the cheese.
  2. In a bowl, add butter, grated cheese and flour.
  3. Mix well.
  4. Add salt, chilli powder, and 1 tablespoon of chilled water, and mix well.
  5. Do not overmix. When the dough comes together, stop mixing.
  6. Cling film the dough and leave it in the fridge for 30 mins to chill.
  7. Take it out after 30 mins, and remove the cling film.
  8. Roll the dough flat and thin. This part of a bit tricky so is patience. Dust the rolling surface properly with dry flour to avoid the dough from sticking to the surface,
  9. Cut off the uneven edges.
  10. Use a pizza cutter and cut small square or rectangular pieces.
  11. Transfer to a baking tray lined with a baking sheet.
  12. Bake at 180C for 13 mins for a soft texture, and 15 for crispiness.
  13. The crackers are done; let this cool down properly before snacking.
