Vegan Homemade Thai Red Curry Paste Recipe

Ingredients For Homemade Thai Red Curry Paste Recipe:
- Ginger/galangal: 1 small stick
- Peppercorns: 2 tsp
- Garlic cloves: 5-6
- Red chilies soaked for 10 minutes: 5-7 depending on how much heat you like.
- Lemongrass: a finger-sized piece is good enough. It has a strong smell and flavor, so if you are not used to this just like me, you can either put very little or skip this altogether.
- Grated onion: half
- Green coriander leaves: 1/3 cup
- Coconut milk: 3-4 tbsp
- Chilli garlic sauce: 2 tbsp
- Coriander powder: 2 tsp
- Cumin powder: 1 tsp
- Lemon juice: 2 tsp
- Salt: 1 tsp
- Lemon zest or lime leaves
- Thai basil: 5-6 leaves
Methods:
- Blitz them to a fine paste.
- Store them in the fridge and they will last a week easily.
