Vegan Gazpacho Cold Soup Recipe

Gazpacho is a cold soup made of raw vegetables and is served cold. This soup originated in Spain and can be easily customized, for example, I added green grapes to my recipe.

Tonight I might try making the watermelon Gazpacho by replacing grapes with watermelon.

Serves:3-4

Prep. Time: 10 mins

Ingredients For Vegan Gazpacho Cold Soup Recipe:

  • Cucumbers: 4: peeled, seeded, and chopped
  • Green Grapes: 1 1/2 cups
  • Green onion: 1 tbsp chopped (optional)
  • Garlic Cloves: 1- 2
  • Extra Virgin Olive Oil: 3-4 tsp
  • White Wine Vinegar: 2 teaspoons of lemon juice: 1 tsp
  • Water: half-1 cup
  • Salt: As per your taste
  • Green onions for garnish: 1

Method:

  1. In a blender, combine the cucumbers, grapes, garlic, olive oil, vinegar, and water; puree until smooth.
  2. Season with salt. Leave it in the refrigerator to chill. Serve chilled.

Tips: You can also garnish with sautéed mushrooms, green onion, or feta cheese.
