Vegan Gazpacho Cold Soup Recipe
Gazpacho is a cold soup made of raw vegetables and is served cold. This soup originated in Spain and can be easily customized, for example, I added green grapes to my recipe.
Tonight I might try making the watermelon Gazpacho by replacing grapes with watermelon.

Ingredients For Vegan Gazpacho Cold Soup Recipe:
- Cucumbers: 4: peeled, seeded, and chopped
- Green Grapes: 1 1/2 cups
- Green onion: 1 tbsp chopped (optional)
- Garlic Cloves: 1- 2
- Extra Virgin Olive Oil: 3-4 tsp
- White Wine Vinegar: 2 teaspoons of lemon juice: 1 tsp
- Water: half-1 cup
- Salt: As per your taste
- Green onions for garnish: 1
Method:
- In a blender, combine the cucumbers, grapes, garlic, olive oil, vinegar, and water; puree until smooth.
- Season with salt. Leave it in the refrigerator to chill. Serve chilled.
Tips: You can also garnish with sautéed mushrooms, green onion, or feta cheese.
