Lemon Yogurt Pie Recipe
Filled with the sweet and tangy flavours of lemon topped with creamy yogurt and condensed milk, lemon yogurt pies are always delicious and super simple to make. What else do you need, other than the fluffy consistency and rich in flavour with extra tanginess after a very tiring day? I can assure you that they are super healthy and tasty.

Ingredients:
Lemon Juice
The hero of the recipe adds up the taste and benefits. Lemon brings freshness to anything and everything if you use it in the correct quantity. A significant advantage of lemon is that it comes with a great punch of Vitamin C and the cherry on the icing is that there are no calories at all. Even though the stores offer bottles of lemon juices, going for the real ones would be great!
Plain Yogurt
Yogurt is the second lead of this recipe. And most yogurts are gluten-free. Still, look twice and make sure you choose the right one before you drop that pack of yogurt in your shopping cart. If you need a natural immunity booster, I would suggest going for yogurt. Regular consumption of yogurt will enhance your immune system and regulate your blood sugar levels.
Condensed Milk
Condensed milk provides extra calories and protein. So those of you who are trying to gain weight can take a hint from here (wink* wink*). I have used Amul condensed milk here for this recipe. We can also use this condensed milk for other recipes like cold coffee, burfi, halwa, laddoo, and many more sweets.
Gluten-free Food colouring
You can easily find some gluten-free food colouring on Amazon, and if at all you are seeing it difficult, I do have some good news; you can make try some homemade alternatives, as there are a bunch of tutorials online. Being said that, always look for the gluten-free label on the product.
Ingredients for the Yogurt Filling:
- Plain yogurt: 1 1/2 cups
- Condensed milk: 1/2 cup
- Green food coloring: 2-3 drops (Make sure it is gluten safe also this is optional)
- Lemon juice: 1 tbsp
Ingredients for the Pie:
The crispy and crunchy crust would fill our hearts and tummies. Baking with yogurt is a whole other experience. It gives the cake a moistness and tanginess that milk can’t quite match. In the first bite, a freshly made lemon yogurt pie tastes like bliss. You have to believe me.
Crust:
- GF all-purpose flour blend: 2 cups ( You can checkout Gluten-free All Purpose Floor Recipe here.)
- Butter: 1/2 cup ( the more butter you use the flakier the pastry would be. You can go up to a cup, I used 1/2 a cup for this one)
- Xanthan gum: 1 tsp (Xanthan gum is just a product of bacteria fermenting sugar. It uses as a thickener.)
Method:
- Whisk all the yogurt filling ingredients together and properly.
- For pie, combine all ingredients and make a dough.
- Rest the dough covered for 10-15 mins and then with a rolling pin, make a round chapati like shape, only thicker.
- Line the pie container with some butter. (My container has a removable base)
- Place the round pie into the pie dish, line the base and the sides of the pie dish properly. Cut off the extra if it is bigger than the edge of the pie dish.
- Now pour in the thick yogurt filling.
- Place this in the oven, bake @180C for 25-30 mins until the pie is done.
- Take it out from the oven. let it cool down.
- Then place in the fridge for an hour.
- Serve cold.
