Gluten-free Banana Pancakes Recipe

These gluten-free pancakes are so good that you would want to eat them every single day. These are moist and soft, with a hint of sweetness, but not too much so you can still drown them in your favorite syrup.

Serves 1-2 people. Makes 5-6 pancakes.

Ingredients For Gluten-free Banana Pancakes Recipe:

  • Brown rice flour: Half cup + 1/4 cup
  • Banana: 1 (mashed)
  • Milk: Half cup
  • Honey: 1 tbsp ( you can adjust sweetness according to your liking)
  • Brown sugar: 1 tsp
  • Baking soda: 1/2 tsp
  • Baking powder: 1/2 tsp
  • Egg: 1. Whisked
  • Vanilla essence: 2-3 drops
  • Butter or pure coconut oil: 1 tbsp

Method:

  1. In a large bowl, sift together the flour, baking powder, baking soda, and sugar. Combine everything together.
  2. Whisk them nicely and leave this aside for 10 minutes. The batter should look like a regular pancake batter. Neither too thick nor too runny.
  3. After 10 minutes, heat a lightly oiled griddle or non-stick frying pan over low medium heat.
  4. Pour a small ladleful of the batter into the middle of the pan. Cook on low heat for 2 minutes or less on each side.
  5. When the sides turn dark brown you can flip the pancake and cook the other side too.
  6. After the pancakes are done, you can have them with some more honey/ maple syrup/ your favorite marmalade. I like mine with some honey, fruits and black coffee.
