Gluten-free Banana Pancakes Recipe
These gluten-free pancakes are so good that you would want to eat them every single day. These are moist and soft, with a hint of sweetness, but not too much so you can still drown them in your favorite syrup.
Serves 1-2 people. Makes 5-6 pancakes.

Ingredients For Gluten-free Banana Pancakes Recipe:
- Brown rice flour: Half cup + 1/4 cup
- Banana: 1 (mashed)
- Milk: Half cup
- Honey: 1 tbsp ( you can adjust sweetness according to your liking)
- Brown sugar: 1 tsp
- Baking soda: 1/2 tsp
- Baking powder: 1/2 tsp
- Egg: 1. Whisked
- Vanilla essence: 2-3 drops
- Butter or pure coconut oil: 1 tbsp
Method:
- In a large bowl, sift together the flour, baking powder, baking soda, and sugar. Combine everything together.
- Whisk them nicely and leave this aside for 10 minutes. The batter should look like a regular pancake batter. Neither too thick nor too runny.
- After 10 minutes, heat a lightly oiled griddle or non-stick frying pan over low medium heat.
- Pour a small ladleful of the batter into the middle of the pan. Cook on low heat for 2 minutes or less on each side.
- When the sides turn dark brown you can flip the pancake and cook the other side too.
- After the pancakes are done, you can have them with some more honey/ maple syrup/ your favorite marmalade. I like mine with some honey, fruits and black coffee.
