No Garlic no onion vegan gluten-free Authentic Pindi Chole Recipe

Chole/ chickpeas: 1 cup

Dried Amla: 4-5 pieces or get a bag of tealeaf

Black Cardamom: 1-2

Green Cardamom: 2-3

Cinnamon Stick: 1 small

Cloves: 3-4 (optional)

Peppercorns: 7-10

Bay leaf:2

Salt: 1 tbsp

Baking soda: 1/2 teaspoon

Chaat Masala : 1 tbsp ( for DIY chaat masala recipe, click here)

Cumin Powder: 1 tbsp

Red Chilli Powder: 1 teaspoon

Coriander Powder: 1 tbsp

Garam Masala Powder ( for DIY garam masala powder, click here)

Dry Mango Powder: 1/2 tbsp

Any neutral oil/vegetable oil: 1/2 + 1/3 cup (I used Canola oil)



Tip: for the typical Black colour, it is always a great idea to soak chickpeas in an iron wok/karahai. The iron container adds iron to the chickpeas making it even more healthier.
